This is obviously 100 percent pure speculation, but let me take a crack at it anyway.
I would say no, he wouldn't, but not for the reasons you might think. There is nothing (that I can find) in the New Testament about piercings, but we can see how both Jesus and Paul feel about some other social issues. Jesus talked a few times about not worrying about appearance and to look at the heart. He told us to stop worrying about man-made rules and focus on how we treat people. So would Jesus have a issue with piercings? Probably not. But would he wear some Himself? I doubt it.
Paul wrote about not doing things that cause others to stumble, even if those things are not wrong in and of themselves. For example, drinking in moderation is not wrong, but if you hang out with an alcoholic and your casual drinking is making life miserable for him, then don't do it. Likewise, if your body piercing, thought it may not be wrong, causes problems for others, don't do it.
Imagine the pastor or minister of a large church getting several piercings. Would that make some of the congregation nervous or upset? Unfortunately it would, so for that reason he or she should avoid doing it. The congregation should not judge by appearances, but they will and so the pastor needs to take that into account. I imagine Jesus would follow the same principle. If Jesus were alive today, He would likely not have long hair or tattoos for the same reason. People have perceptions about these things, and so best to avoid them, even if there's nothing wrong with them.
